Veganising is not always easy, especially when eggs are necessary as a binding agent. Fortunately there are substitutes.
My first choice: flax seeds
- Grind 1 tablespoon of seeds using a coffee grinder.
- Transfer to a bowl and add 3 tablespoons of water. Stir well.
- Set aside for 15mn in the fridge.
- Voilà ! You get a vegan jelly-like paste that will replace one egg.
