Soak the noodles for 10mn in boiling water. Drain and transfer to cold water immediately. Set aside.
Meanwhile, grate the carrots and chop the seitan into bites. Sauté on high heat for 2-3mn in sesame oil.
Reduce to medium heat, add in my vegan nuoc mam sauce and sugar and stir well. Sauté for 5 minutes and add in sesame seeds and fresh coriander.
Serve immediately with rice noodles.
