Cook the lentilles following the instructions. Drain and keep the cooking water aside.
In a food processor, blend the lentils with the garlic, tahini, lemon juice, nutritional yeast and cumin, adding cooking water until you get a smooth texture.
Season to salt, sprinkle with za’atar and store in fridge for an hour before serving.
