Home-made crackers are so easy to make and this gluten-free version is super tasty using special flours.
In a bowl, mix the dry ingredients (flours, herbs, pepper, sugar and salt) with the olive oil.
Once homogeneously mixed, gradually add the water while stirring until you get a uniform dough ball.
Divide in 2 balls and preheat oven to 220°C.
On your kitchen counter, using extra flour and a rolling pin, roll out each piece of dough as thin as you possibly can.
Once rolled, placed on oiled parchment paper on your baking tray.
Bake for about 4mn. When the edges start getting brown, flip immediately and bake for another 4mn.
Turn off the oven and leave to rest inside the oven for 30mn to one hour to dry out and get crispy.
Break into pieces and serve immediately, here with my ceviche (see recipe) !
