Peel off the skins of the chayote and the carrot and grate using a food processor.
Crush the garlic and chilis with a mortar.
In a bowl, add the lime juice and nofish-sauce (my super easy recipe is here!) to the garlic and chili paste.
Add the chayote and carrot and stir well.
Crush the peanuts and add to the bowl.
