Are you familiar with textured soy proteins (TSP)? They’re an inexpensive source of protein, sold in dry granules. Couldn’t be easier to cook and customise!
Dissolve the Marmite and soy sauce into boiling water, and soak the textured soy proteins for 30 minutes in this broth.
Meanwhile, chop the onion and in a large pan, sauté in olive oil for 5 minutes. Add tomato paste and stir well. Set aside.
Sieve the textured soy proteins, keeping the broth aside.
Add the TSP to the large pan, stir well, and cook for about 5 minutes, splash ing soaking water to irrigate and soften the texture. Serve with spaghetti and my pumpkin seed parmesan (see recipe).
