Oven-bake the carrots (with their skin on) for 40 minutes at 180°C.
Meanwhile blend the nori seaweed with the nuoc mam sauce and the water (warm). Add liquid smoke to taste (I’m adding 4 sprays).
Leave the carrots to cool down, cut in thin slices and marinate for at least 24 hours before serving.
