Today I’m introducing achiote !
It’s a tree from Tropical America whose fruits give red seeds, not edible if raw, but usable once dried out.
Left: a ready-to-use paste that will melt when heated
Right : the dried seeds to be sautéed in a bit of oil, then taken out.
Used in Equatorian cuisine, it is a powerful colouring agent and a “peppery nutmeg” flavour enhancer.
