Spread your seitan pieces (see recipe) with a bit of flour, using a rolling pin.
Brush with the plant-based egg (see recipe), coat in breadcrumbs, cover and leave to rest for about 15 minutes in the fridge.
Fry for about 10 minutes in olive oil, flipping half-way through.
