Buckwheat crêpes, that we actually call « galettes » in Brittany, are vegan by tradition and super tasteful! They are mostly used in salty recipe.
The most famous crêpe recipe – mostly for sweet – uses wheat.
Pour the flower, salt and pepper in a bowl and add water gradually gently whisking the mix until is homogeneous.
Cover with a kitchen towel and leave it to settle for at least 45 minutes.
Heat a frying pan with the butter. Make sure it is not a bath but that it has covered the whole surface. I am using a kitchen towel to spread it all over.
When the pan is super hot, pour in a ladle of dough. Cook for 1-2mn on each side. Do it for as many galettes as you can!
Garnish with your favourite stuffing!
