Soy proteins are amazing when it comes to veganising minced meat dish!
In a bowl, dissolve the Marmite with the soy sauce in the warm water. Soak in the soy protein and let them grow for 15 minutes.
Mince the onion, setting the green part aside, and sauté the white for 5 minutes on medium heat in the coconut oil. Meanwhile, mince the garlic, ginger and chili (removing the seeds) and add to the pan.
Drain the soy protein and add to the pan. Sauté for 2-3 minutes.
Add the nuoc mam sauce, coconut milk, a few broccoli florets and the green from the onion, and reduce for about 10 minutes, stirring regularly. Season to salt and pepper and serve with lime and fresh coriander.
