Your meat: you’ll want it crispy, so fry it a bit if necessary!
Noodles: soak them into boiling water for 10mn. Drain and soak into cold water. Set aside.
Broth: dissolve the Marmite into the boiling water. Set aside.
Veggies: soak the dried mushrooms into boiling water until rehydrated. Chop the spring onion. Finely chop half of the coriander and the chili (remove the seeds if you don’t want it too hot).
In a large pan, heat the olive oil and throw in the spring onion, mushrooms, chili, soy sauce and cinnamon. Sauté for 10mn.
Add the broth and chopped coriander and simmer for another 10mn.
Blend together the peanuts with the other half of coriander.
Put noodles into 2 serving bowls, cover with the broth. Add the plant-based meat on top and sprinkle with peanut mix.
