My parents grow all sorts of tomatoes including this black variety, and it reminded me of this kid’s recipe my Mum used to make!
Finely chop the garlic and onion, and roughly chop the tomatoes.
In a large pan, heat the olive oil and sauté the garlic and onion for 2 minutes on medium heat.
Add the tomatoes, a bit of water if necessary, stir well and cook for a minute.
Season to salt, add in the rice and water, bring to the boil and cook for 12 minutes on low-medium heat, stirring regularly.
