Katsu is a traditional Panko (light breadcrumbs) breaded meat dish, served with Tonkatsu sauce (a fruit-based brown sauce). Here with tofu, I’m planning on trying more substitutes: mushrooms, seitan…
Cut the tofu block into 2 equal slices, and press to get rid of water (I wrap them into a towel, cover with a heavy pan and wait 30 minutes).
In a bowl, mix the milk, flour, corn starch, paprika and salt to get a dough. Put the Panko breadcrumbs in another bowl.
Heat the oil in a frying pan. Meanwhile dip the tofu slices into the dough, then toss into the breadcrumbs.
Fry for about 5 minutes on each side, until you get a golden-brown colour and a crispy texture.
Use kitchen paper to remove the excess of oil, cut into strips and serve immediately in the plate: lay on rice and decorate with spring onions and Tonkatsu sauce.
