If you’re looking for an healthy and vegan alternative to scrambled eggs, this recipe is for you! You can use both silk and firm tofu so there’s no need to argue about it over breakfast. Using firm tofu you’ll have to add water to it so it doesn’t burn over cooking; with silk tofu you’ll have to cook until the water goes away!
And add protein powder (see Alver World products) for a super energising start of the day!
Using firm tofu: crush into a bowl and use a fork to crumble it. Add a bit of water to it so it does not burn when cooking.
Using silk tofu: empty contents to a bowl. No added water necessary.
Add a bit of oil to a frying pan and when it’s hot, add the tofu and the rest of the ingredients.
Stir until well combined and cook over medium heat for 5 to 10 minutes, until the water is gone and you are satisfied with the texture.
Top it with fresh herbs, spring onion… enjoy!
