Blend the onion, garlic, ginger and coconut oil into a paste.
In a large pan, fry for about 5 minutes until softened.
Stir in turmeric, cumin, ground coriander, cayenne pepper and tomato paste and cook for about 2 minutes, then add the planted chicken, stirring to cover in the spice mix.
Cook for about 5 minutes.
Pour in chopped tomatoes, along with salt, cover and cook on a low heat for about 20 minutes.
Tip in fresh chopped coriander and slivered almonds and serve with a basmati rice.
