12 years ago in Montreal the vegetarian version I tried included peppers so I had to use these here too! With my smoked movarella and vegan gravy it makes the ideal winter dish!
Preheat oven to 200°C. Wash your organic potatoes thoroughly so you can keep the skin, and cut into fries. Cut the pepper into strips. Cover in olive oil, lay on a baking tray and bake for 30 minutes, stirring half way through.
Lay in a tray, cover in gravy, add scoops of smoked movarella and broil for 5 minutes maximum.
Sprinkle in spring onions and serve immediately.
