Refrito is an onion, garlic, spices and achiote paste that Ecuadorians use as the basis for many recipes.
Finely chop the onion and garlic.
In a pan, heat the olive oil and achiote. Stir regularly and if you’re using seeds, take them out when the oil has a bright orange colour (or once the condiment is fully dissolved).
Throw in the onion, garlic and cumin and fry for 2mn on medium heat until the oil is absorbed.
