Nutritious, high-protein… Lentils are famous for their health benefits!
Chop the onion, mince the garlic, dice the carrot and prepare the broth.
In a large skillet, heat the olive oil and sauté the onion and garlic on medium heat for about 5 minutes.
Stir in tomato paste, cumin, smoked chipotle, salt, black pepper and cayenne and sauté for another 2 minutes.
Add broth, lentils and carrot. Bring to a boil, then simmer on medium-low heat, partially covered, for about 30 minutes.
Season to salt and pepper and blend half the soup using an immersion food processor. Add back to the soup and stir in lemon juice and chopped coriander.
Serve with extra lemon, chili flakes and a drizzle of coconut aminos.
