Socca is a very traditional chickpea bread recipe from Nice, South of France. My recipe is super easy and pure bliss in Summer!
In a bowl, mix the chickpea flour, water, 1tbsp olive oil and salt until the mixture is homogenous and leave to rest for 30mn.
Heat 1tbsp olive oil in a frying pan. When it’s very hot, pour in the dough and immediately reduce the heat to low-medium. Cook for 3mn, then flip and cook the other side for a further 3mn.
