A super simple and plant-based Fig Newtons ® recipe!
(makes 12-16 biscuits)
Prepare the fig filling: cut into cubes and blend, adding water until you get a homogeneous paste. Set aside.
When your shortbread dough is ready to be worked on, divide in two and roll out on your floured work surface, shaping two long rectangles (approx. 10cm wide).
Preheat oven to 150°C and put the biscuits together: lay in a line of fig filling in the middle of each dough rectangle. Fold perfectly wrapping the paste, and cut into biscuits. Draw on them with a fork if you wish.
Lay on a baking tray covered with parchment paper and bake for 25 minutes. Take them out when they are light golden and leave to cool down before you enjoy them!
