This stir-fried rice dish, traditionally prepared with sausage, is delicious with my seitan and a great way to recycle rice leftovers!
Cook rice following instructions, drain and set aside.
While it cooks, finely chop the spring onions (setting aside the green part for later), the garlic and a small piece of ginger. Mince the chili and get rid of the seeds. Cut the seitan into cubes, and carrots in diagonal slices.
In a large pan, sauté the white parts of the onion in the olive oil for 5 minutes on medium heat. Add garlic, ginger and chili for another minutes. Throw in the seitan and grill for about 5 minutes, adding a bit of water if necessary. Add carrots, cover in water and simmer for about 10 minutes on medium-high heat until water is evaporated.
Reduce heat to low-medium, add in the rice, maple syrup and soy sauce, stir well, cover and heat for about 5 minutes.
Serve in bowls with sesame seeds, the green part of the onion, fresh coriander and lime.
