Refined white sugar has a pretty bad reputation: the acidity it is bringing to our body leads to serious public health issues (heart disease, overweight, diabetes…). It is quite easy to find other alternatives (agave syrup, cane sugar…), but have you heard of coconut blossom sugar?
It comes from the flower of a specific type of coconut tree that produces about 25kg sap per day jour. Once dried, you get this exceptional sugar :
1️⃣ On a nutritional level: it has a very low glycemic index (24.5 vs. 70 for refined white sugar and 65 for cane sugar) and is a natural source of vitamins (B,C) and minerals (iron, zinc…).
2️⃣ It has a strong sweetening power, so you’ll need less than usually and is a great substitute to regular sugar in any recipe.
3️⃣ It is the greenest sugar, coming from the sap of coconut flowers. After a harvest the coconut tree will keep producing other flowers, fruits…
4️⃣ According to the United Nations it is the most sustainable sugar that brings revenues to poor populations.
So please adopt it in the kitchen!
