Both nutritious and flavoured, lentil dahl is such an easy dish to make!
Finely chop the garlic, the same quantity of ginger and mix with the garam masala, cumin, turmeric, coriander, cayenne, salt and pepper. In a large pan, sauté for 2-3 minutes in the olive oil on medium heat.
Roughly chop the seitan, tomatoes and red pepper. Add to the pan and cook for about 5 minutes, stirring regularly.
Throw in the lentils, broth and coconut milk. Bring to the boil and simmer for about 15-20 minutes, partially covered.
Squeeze in the juice of a lemon and serve immediately with basmati rice and fresh coriander.
