We love hummus! But have you ever tried home-made hummus? It’s got nothing to do with what you find at the supermarket.
The following recipe is my Sichuan pepper and truffle hummus. Sichuan pepper has a very strong citrus flavour, when truffle brings a gourmet note to the mix.
Cook the chickpeas following the instructions on the can. Drain and keep the cooking water aside.
Blend the chickpeas with the garlic, tahini and lemon juice, adding olive oil until it gets smoother.
Add cumin, truffle oil and Sichuan pepper oil for flavouring according to your taste.
