If you are looking for a super tasty and very filling pasta dinner, this is the recipe for you!
It might be hard to believe: the result is super creamy, almost cheesy, and so easy to cook!
Cook the pasta as per instructions. Meanwhile let’s cook the creamy red pepper sauce!
Boil the cashews for 5 minutes.
Add cashews (without the cooking water), milk, red pepper, garlic powder and lemon juice to a blender, and blend until it is smooth.
Return the mix to a pan, cook over medium heat for 2-3 minutes and add salt and pepper until tasteful enough, and use a bit of corn starch to adjust the texture.
Add the pasta to the pan and stir well.
Top with any fresh herbs before serving (we’ve used mint and it was amazing!)
