Potato wedges, just like fries, are accidentally vegan and an amazing comfort food, a lot less fat though!
Best oven-baked with their skin on so prefer organic potatoes.
The following recipe is the easiest I’ve done for years. Please adjust herbs and spices according to your taste and share your results on my Instagram!
Keep the potatoes’ skin but scrub them clean. Cut the potatoes into wedges.
Transfer the wedges to a hermetic container and add the oil, cajun spices and Provence herbs. Shake until the wedges are fully covered with oil, spices and herbs.
Transfer to a baking tray and cook at 200°C for 25-40mn depending on the size of your wedges.
When the skin is crispy and the inside tender, top with sea salt. They’re ready to please you!
