For this German cuisine classic, my seitan (see recipe) is a great meat substitute!
Chop the veggies: the onion, celery and carrot into dices, and mince the garlic. In a large pan, sauté in olive oil for 5 minutes on medium heat.
Chop the seitan into bites, add to the pan and sauté for 5-10 minutes on medium heat.
Add lentils, thyme, nutmeg, bay leaf, cayenne, pepper and salt, and stir well.
Cover with broth, bring to the boil and simmer for 45 minutes, stirring regularly. Add tomatoes if you wish.
Serve immediately, with fresh parsley.
