Finely chop the onion, cut the carrot and celery into dices and sauté for 5 minutes on medium heat in the olive oil. Add chopped garlic halfway.
Chop the wild garlic and add with the tomato coulis. Stir well, add pepper, cover with the broth and bring to the boil.
Add lentils, reduce to a simmer and cook for 45 minutes, partially covered.
Season to salt, and add roughly chopped spinach and basil 10 minutes towards the end of cooking.
Serve immediately with fresh basil.
