This super creamy soup is ideal to use stale old bread that would go to waste, with all of garlic’s health benefits!
Finely chop the garlic and onion and roughly chop the bread into chunks.
Gently melt the butter in a pan. Add the garlic and onion and sauté on medium heat for about 2 minutes.
Add the bread, stir well and cook for about 2 minutes or until the bread has absorbed the butter.
Pour in the broth and Marmite, bring to the boil and simmer for 20 minutes.
Mix using a hand blender and add the soy cream.
Serve with tofu for more protein, and sprinkle with ground pepper.
