These soy protein based Bolognese style patties will treat you well!
In a bowl, dissolve the Marmite with the soy sauce in the warm water. Soak in the soy protein and let them grow for 15 minutes.
In the meantime, prepare your flax egg by blending the flax seeds (I’m using a coffee grinder) and stirring in 3 volumes of water, and leave to thicken for 15 minutes into the fridge.
Drain the soy protein, using a potato masher if possible. Blend with the flax egg, chick pea flour, nutritional yeast, tomato puree, mustard, onion, garlic, paprika. Season to salt and pepper.
With wet hands, make balls that you will flatten to shape patties. Fry for about 5 minutes on each side, in the olive oil, on medium heat.
