Dahl is a very typical Indian dish, accidentally vegan, made of dried legumes (lentils, peas…) and spices.
This red lentils version is super easy to make!
Cook the lentils following instructions. Once cooked, drain and set aside.
Meanwhile, roughly crush the tomatoes. Add the coconut milk, stir well and set aside.
Finely chop the onion, and grate the garlic and ginger.
In a large pan, fry the onion with the olive oil about 5mn until golden and fragrant. Add the garlic, ginger, cumin, coriander, mustard, turmeric and garam masala. Add the tomato purée, coconut milk and lentils, reduce to medium heat and cook for 10-15mn, stirring regularly, until the water is gone and the texture is smooth.
Remove from fire, add the spinach, stir well, and add the juice of one lemon.
Serve with basmati rice and fresh coriander!
