For this creation I wanted to have the gooey texture of gorgonzola and its unique pungency. Incredible combined with caramelised red onion on a pizza (follow my recipe)!
Boil the cashews for 5mn.
Drain and blend with the other ingredients until you get a smooth cream.
Thicken on medium heat for 5mn, stirring continuously.
Transfer for 1h to fridge to enjoy chilled or use it warm!
