“Mote” is a generic term used for certain varieties of boiled corn grains in many Latin America countries. They can be found dried and can be used once soaked for hours, just like legumes.
Crush tofu into a bowl and use a fork to crumble it. Add milk, salt, pepper, turmeric and stir well. Set aside. Chop spring onion.
Heat the oil in a pan and on medium heat, sauté the spring onion and mote for a few minutes. Add the tofu mixture and stir well.
Add any greens (here parsley and spinach) and cook over medium heat for 5 to 10 minutes, until the water is gone and you are satisfied with the texture.
