A one-pot recipe so cajun flavours are absorbed by the pasta and seitan!
Chop the seitan into bite-size pieces, and finely chop the onion and red pepper. Prepare the broth.
In a large pan, heat the olive oil and sauté the onion and red pepper for 3-4 minutes on medium heat.
Throw in the cajun seasoning and cayenne, stir well. When fragrant, throw in the seitan pieces, stir well and grill for about 5 minutes.
Add pasta, broth and tomato purée and cook following instructions from the pasta, on low-medium heat and partially covered (usually about 8-10 minutes).
Add coconut milk, stir well, season to salt and pepper and serve immediately.
