Cashews, cajun spices and my chicken-style tofu (see recipe) for this yummy dish!
Prepare your chicken-style tofu (see recipe), soak the cashews in boiling water for half an hour, and preheat oven to 200°C.
Meanwhile mince the garlic, cut the tomato into dices and prepare the broth.
Drain the cashews and blend with the milk. Set aside.
In a large pan, melt the butter and sauté the garlic and tomato for 30 seconds on low-medium heat. Add the broth, bring to the boil, then add the cashew cream, cajun spices, and once hot, the tofu.
Season to salt and pepper and serve with rice and fresh herbs.
