Yaki udon is a Japanese stir-fried udon noodles made with your choice of protein (my chicken-style tofu bites) and vegetables seasoned with a savory sauce.
Prepare your chicken-style tofu bites (see recipe). Set aside.
For the yaki sauce, blend the garlic, the same quantity of ginger, soy sauce, Siracha sauce, rice vinegar, sesame oil and sugar. Set aside.
With boiling water, rehydrate the mushrooms and soak the noodles for 3mn.
Meanwhile, grate the carrots and finely chop the scallions, and sauté for 5mn on high heat, stirring continuously.
Pour in the yaki sauce, then add in the noodles, mushrooms and spinach. Stir well and sauté for another 5mn on medium heat.
Add the tofu, stir well and serve immediately!
