Gỏi cuốn is a traditional Vietnamese dish consisting of meat, vegetables and herbs wrapped in rice paper.
This version is far from traditional because I have used my own ingredients for the filling that even has a strong Japanese influence. You can easily use any vegetable so this recipe can always be adapted to what’s in the fridge.
This is a very tasty and healthy option for any low calorie meal. Plus they’re super fun to make.
Let’s start with the filling.
Using a steamer cook the broccoli, celery stalk and plant-based chicken. Meanwhile grate the carrot, chop the spinach and mince the mint leaves.
Once the broccoli, celery and chicken are cooked, leave to cool down, then finely chop.
Transfer to a bowl, stir well and add the silk tofu, lemon juice and wasabi powder. The filling is now ready!
You will now start filling the rice paper leaves, one by one. This is a very manual job so you can’t do you a batch of rolls at once.
Add water to a plate. Soak a rice paper leaf and turn it using your hands until it gets tender.
Add a generous spoon of filling in the middle, then fold, pressing firmly, and roll!
Repeat until you have enough rolls or you’ve used all the filling.
Serve with fresh lettuce leaves and extra mint leaves.
