My seitan is an amazing meat substitute in this West African peanut stew recipe!
Cut the seitan meat into bite-size chunks and sauté for 5 minutes in olive oil on medium heat in a large pan.
Meanwhile, mince the onion, cut the okra pods into cubes and grate the carrot.
Add the onion and tomato passata to the pan, stir well, then pour in the broth, gombos and carrot. Bring to the boil and cook for 35 minutes.
Add the peanut purée, stir well and simmer for 20 minutes.
Season to salt and pepper and serve with jasmine rice.
