Growing up in France I have always been addicted to mayonnaise, saw my Dad make it so easily and many people struggle with it, so a vegan version seemed pretty challenging.
After trying many different recipes I have come up with what I believe will be a perfect partner to the spicy potato wedges!
The Kala Namak salt will give a real taste of egg!
Please make sure all ingredients are at room temperature. Start by putting all ingredients but the oil in a bowl and whip using an electric mixer for about 1mn.
Have the oil nearby and start pouring it very slowly and gradually without stopping whipping. The mix will thicken.
When you are satisfied with both the texture and the quantity, readjust the taste using more lemon juice, salt and pepper if needed.
