Nothing easier than this chick pea omelette to start the day with a protein boost!
In a bowl, mix the flour, nutritional yeast and salt, and add water while stirring continuously.
Heat the olive oil in a pan. Turn down to low-medium heat, pour in the batter, cover and cook for 4 minutes.
Flip using a chopping board or flat surface. Add fresh spinach on top and cover again so they steam and get tender, about 2-3 minutes.
Fold in two and serve immediately.
