For this traditional Japanese recipe, my Asian spices seitan is a great substitute!
Cut the seitan into strips.
In glass, mix the soy sauce, sake and mirin.
Set half of the mix aside and blend the other half with garlic and the same quantity of ginger. Marinate the seitan in the blended mix for 30 minutes.
Grill the seitan for about 5 minutes in olive oil. Set aside.
In a large pan, heat the coconut sugar and add the other soy-sake-mirin. Stir continuously until you see big bubbles and add in the seitan.
When it gets dry, soak in broth and simmer on medium heat for about 10 minutes or until the broth has reduced.
Sprinkle with black pepper and immediately.
